Snow fungus, date and wolfberry soup

Mmm… sweet, light and heartwarming. That is what usually comes to mind when one thinks of a homemade Chinese dessert soup, and this snow fungus, date and wolfberry soup lives up to that image perfectly.

Ingredients (serves 4-5 people)

Snow fungus 银耳/白木耳 (15g) Chinese dates 大枣 (10 large / 20 small) Wolfberries 枸杞子 (10g) Water 水 (2L) Rock Sugar 冰糖 (to taste) Pandal leaves 香兰叶 (1 bunch)


  1. Wash the snow fungus and remove the stems, then soak the snow fungus in water for 5 min.

  2. Cook the snow fungus in water for 45 min.

  3. Add all the rest of the ingredients in and cook for another 15 min.


Snow fungus (also called white fungus / silver ear mushroom)

Beauty properties: Snow fungus is well known for its properties of replenishing Yin (the cool and moist aspect) and moisturising the body. It is believed to keep the skin moist, improve the complexion and lighten spots on the skin. These properties are very similar to bird’s nest’s, and thus snow fungus is often touted as a cheaper alternative to bird’s nest.

  1. 将银耳洗净,除掉银耳底部的干,并浸泡水里5分钟。

  2. 将银耳炖45分钟。

  3. 将其他材料加入锅,炖多15分钟。
